- Smoky Tangy Sauce
- ½ cup (120 g) sour cream
- ⅓ cup (60 g)
- 2 tsp (10 g) French's Classic Yellow American Mustard
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp (20 mL) water
- 2 tsp sea salt flakes
- Charred Corn
- 2 corn cobs, cleaned
- 3 tsp
- 2 tbsp (30 g) unsalted butter, melted
- Steak
- 2 x 200-250 g beef fillet steaks
- Remaining
- Oil, for cooking
- To Serve
- Mini flour tortillas
- Mixed lettuce
- Crumbled feta cheese
- Fresh coriander leaves
- Cholula® Chipotle Hot Sauce

INSTRUCTIONS
- 1 In a bowl, use a whisk to combine all ingredients for the smoky tangy sauce. Mix until well incorporated. Cover and keep refrigerated until used.
- 2 Bring a medium pot of water to the boil and place in corn cobs. Boil gently for around 3-4 minutes then remove. In a bowl, combine three teaspoons of Taco Seasoning and melted butter.
- 3 Using a grill rack set over the stove, or on the grated side of a BBQ, char corn over MEDIUM-HIGH heat. Cook corn for 1-2 minutes on each side over the open flame or until kernels are charred. Let cool slightly before slicing kernels off the cob. Toss kernels with melted butter and seasoning mix.
- 4 Coat steak on all sides with remaining Taco Seasoning. Heat a greased BBQ grill or a non-stick gridle pan over MEDIUM-HIGH heat. Cook steak to your liking, turning once. Let rest for 5 minutes before slicing.
- 5 Warm tortillas on a greased non-stick pan or flat grill over MEDIUM-HIGH heat. Cook on both sides until tortillas soften and are lightly browned.

To serve, top warm tortillas with mixed lettuce, followed by sliced steak and charred corn. Drizzle with smoky tangy sauce and top with crumbled feta and fresh coriander leaves. Serve with additional Smoky Chipotle Salsa and Chipotle Hot Sauce.
Tips:
• We recommend cooking your steak medium-rare – about 2 minutes each side for a 2 cm-thick steak.
