Cauliflower Tacos

INGREDIENTS

  • Cauliflower
  • 1 medium (700-800 g) cauliflower head
  • 1 x 28 g sachet
  • 1 ½ tbsp (30 mL) oil
  • ½ cup (60 g) shredded cheese
  • Zesty Avocado Crema
  • 1 medium avocado, flesh only
  • 2 tbsp (40 mL) lime juice
  • ½ tbsp (10 mL) oil
  • 1 tsp sea salt flakes
  • ¼ cup fresh coriander leaves, roughly chopped
  • To Serve
  • Yellow corn tortillas
  • Fresh coriander, finely chopped
  • Lime wedges
  • Cholula® Original Hot Sauce

INSTRUCTIONS

  • 1 Preheat oven to 200°C fan-force and line a tray with baking paper. Remove leaves and stem from cauliflower head. Cut any large florets into halves or quarters (depending on size).
  • 2 Toss cauliflower florets in Taco Seasoning and oil. Lay cauliflower flat on prepared tray and roast in preheated oven for 20 minutes. Turnover and roast for another 5-10 minutes or until edges are golden, and cauliflower is tender enough to pierce with a knife. Sprinkle with cheese and return to oven for another 3-5 minutes or until golden.
  • 3 Whilst cauliflower is cooking, place all ingredients for the zesty avocado crema in a food processor. Blend until smooth and emulsified (1-2 minutes).
  • 4 Warm tortillas on a greased non-stick pan or flat grill over MEDIUM-HIGH heat. Cook on both sides until tortillas soften and deepen in colour.
  • 5 To serve, fill tortillas with cheesy cauliflower. Dollop zesty avocado crema over top and sprinkle with more coriander. Serve with fresh lime wedges and Cholula® Original Hot Sauce.

    Tips:
    • For something a little bit different, replace cauliflower with diced potato.
