- Salmon
- 4 x skin-on salmon fillets, about 1-inch thick
- 1 tbsp brown sugar
- 1 tsp salt
- ¼ tsp black pepper
- Grilled Tomato Salsa
- 2 cups mixed colour cherry tomatoes
- ½ cup sliced garlic
- ¼ cup (60 mL) olive oil
- 2 tbsp fresh thyme leaves
- 1-2 tsp Cholula® Chipotle Hot Sauce

- 1 Place fish, skin side down, in a shallow dish. In a small bowl, combine brown sugar, salt, and black pepper. Sprinkle rub evenly over salmon and use your fingers to rub it in. Cover and leave to marinate in the fridge for up to 30 minutes.
- 2 In the meantime, combine all ingredients for the Grilled Tomato Salsa in a bowl. Heat a grill plate over MEDIUM heat. Grill tomato mixture for about 10 minutes or until tomatoes are softened and slightly charred but still retain their shape, stirring occasionally. Transfer to a serving bowl and drizzle with Hot Sauce, tossing to mix. Set aside.
- 3 Lightly oil a non-stick fry pan. Place fish skin side down in pan before turning on heat and flatten gently with a spatula. Turn heat to MEDIUM and cook for 4-5 minutes before turning. Cook the other side for 30-60 seconds or until fish flakes easily with a fork.

Serve cooked salmon fillets with your choice of sides and Grilled Tomato Salsa on top.
