- Corn Ribs
- 4 whole corn cobs, husks removed
- ¼ cup (60 mL) olive oil
- 1 x 28 g sachet
- 4 regular flour tortillas
- Dressing
- 1 small red onion, finely diced
- ½ long red chilli, finely diced
- 1 medium lime, juice only
- ¼ cup (60 mL) olive oil
- ⅓ cup coriander leaves, roughly chopped
- 2 tbsp (40 mL)
- Dipping Sauce
- ⅓ cup (80 g) mayonnaise
- 2 tsp Cholula® Original Hot Sauce
- To Serve
- Lime wedges, to serve
- Cholula® Original Hot Sauce

INSTRUCTIONS
- 1 Pre-heat oven to 220°C (200°C fan-forced) and line a large tray with baking paper.
- 2 On a secured chopping board and using a sharp knife, carefully cut each corn cob into quarters to create “ribs”.
- 3 Place ribs in a large bowl along with the oil and Taco Seasoning. Toss well to coat all over. Transfer ribs to prepared tray and roast in the oven for 20-25 minutes or until darkened and lightly charred. Toss halfway through cooking for even browning.
- 4 Meanwhile, combine all the ingredients for the dressing in a medium bowl, and all the ingredients for the dipping sauce in another bowl.
- 5 Once ribs are cooked, remove from oven and plate on your serving dish. Spoon dressing over the top and serve with dipping sauce, lime wedges, and additional Salsa Verde and Hot Sauce.
