Cholula® Chicken Quesadillas

Filled with chicken, sautéed peppers and onions, melty cheese and the authentic flavor of Cholula® Hot Sauce, these chicken quesadillas are even better served with Cholula® Original Salsa for dipping.

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 pound boneless skinless chicken breast, cut into small cubes
  • 1 medium bell pepper, seeded and chopped
  • 1 medium yellow onion, chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/3 cup Cholula Taco Cooking Sauce
  • 6 (10-inch) flour tortillas
  • 4 cups shredded Mexican cheese blend
  • Cholula® Original - Medium Salsa, to serve

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add chicken, cook 4 - 6 minutes, stirring occasionally, until lightly browned and cooked through. Remove from skillet; set aside.
  • 2 Add bell pepper, onion and jalapeño to pan. Cook and stir 5 minutes until softened. Stir in Taco Cooking Sauce, cook 2 to 3 minutes or until heated through. Add mixture to bowl with chicken.
  • 3 Carefully wipe skillet clean with a paper towel. Spray with no stick cooking spray. Heat on medium heat. Place one tortilla in skillet. Sprinkle 2/3 cup of the cheese evenly over tortilla. Spoon 1/3 cup chicken mixture onto one half of the tortilla. Allow cheese to melt slightly and fold tortilla in half to cover chicken mixture. Cook just until lightly browned on both sides and cheese is completely melted. Repeat with remaining tortillas, cheese and chicken mixture.
  • 4 Cut quesadillas into wedges to serve. Serve with Cholula® Original Salsa and Cholula® Cilantro Lime or Chipotle Cremosa , if desired.
