Cheesy and Spicy Egg Breakfast Tacos

  • 1 In a skillet or over a burner, toast each tortilla until slightly charred and warm. Set aside.
  • 2 In a small bowl, combine the avocado, kosher salt, and Cholula Chili Lime Hot Sauce. Mash together with a fork until smooth. Set aside.
  • 3 Preheat a nonstick skillet over medium heat. Add 1/4 cup shredded queso blanco or queso de fresco cheese to the center of the skillet, then 1 teaspoon Cholula Original Hot Sauce (be careful as both the cheese and hot sauce may splatter!). Crack an egg on top of the cheese and hot sauce, then cover the skillet to allow the top of the egg to set (tip: adding in 1 teaspoon of water before covering will steam the egg, expediting the cooking process).
  • 4 Repeat step 3 with the remaining cheese, hot sauce, and egg.
  • 5 To assemble your breakfast tacos, top each tortilla with 1/2 the avocado mash, the cheesy fried egg, and optional garnishes of cilantro, crumbled cotija cheese, pickled onions, jalapeno slices, and extra Cholula hot sauce. Enjoy immediately.
