  • Burrito Bites
  • 1 cup cottage cheese
  • 4 ounces plus 2 ounces queso Oaxaca or mozzarella, grated, divided
  • 3 large eggs
  • 1 teaspoon salt
  • 1 cup plus 1 tablespoons tapioca flour
  • 2 tablespoons Cholula® Chili Garlic Hot Sauce
  • 4 ounces bacon, diced (optional, omit for vegetarian version, or substitute with your favorite burrito protein)
  • 1 cup diced white onion
  • 1 cup diced red bell pepper
  • 1/2 jalapeño, minced (optional)
  • To Serve
  • Cholula® Original Salsa
  • Diced avocados
  • Cilantro

INSTRUCTIONS

  • 1 Preheat oven to 400°F. Thoroughly grease the inside of each well in a mini or regular size muffin tin (these will not set well in a jumbo muffin tin) with baking spray.
  • 2 While oven preheats, add diced bacon to a frying pan and sauté over medium high heat, stirring occasionally, for about 3 minutes. Add onion and peppers, continue stirring and sautéing until bacon begins to crisp - an additional 3 - 5 minutes. Use a slotted spoon or strainer to remove mixture from oil and spread on paper towels to drain.
  • 3 Add cottage cheese, eggs, 4 ounces (about 1 cup, grated) queso Oaxaca or mozzarella, Chili Garlic Hot Sauce, salt and tapioca flour to a blender pitcher.

    Note: be very careful when pouring tapioca flour - reach into the blender and pour close to the surface - it has a tendency to mushroom cloud all over the place (it’s a mess and you’ll lose some). Purée on very high until super smooth - about one minute. Use a food processor if your blender isn’t powerful enough.
  • 4 Pour batter into each muffin well, filling up each well about halfway (overfilling will cause issues with setting). Dash a bit of Chili Garlic Hot Sauce in the center of each well. Top with a spoonful of the bacon, onion and pepper mixture and a sprinkle (about 1 tablespoon) of cheese.
  • 5 Bake for 20 - 35 minutes until the bites have puffed and turned deep golden brown. Undercooking will result in bites that will taste great but fall as they cool. Serve with Cholula Salsa and diced avocados. Enjoy!
