Smoky Chipotle Chicken & Cheese Enchiladas

INGREDIENTS

  • 1 can (8 ounces/227 grams) tomato sauce
  • 1/2 cup (125 milliliters) water
  • 1 package Cholula® Flavoured Seasoning Mix Smoky Chipotle Taco Medium
  • 3 cups (750 milliliters) shredded cooked chicken
  • 2 cups (500 milliliters) shredded Monterey jack cheese, divided
  • 4 tablespoons (60 milliliters) chopped fresh cilantro, divided

INSTRUCTIONS

  • 1 Preheat oven to 350°F(180°C). Heat tomato sauce and water in small saucepan until simmering. Stir in Seasoning Mix and bring to boil. Simmer 5 minutes or until thickened slightly.
  • 2 Spray 13x9-inch (33x23-cm) baking dish with no stick cooking spray. Mix chicken, 1 cup (250 ml) of the cheese, 2 tablespoons (30 ml) of the cilantro and 1/4 cup (60 ml) of the prepared sauce in medium bowl. Arrange 1/2 cup (125 ml) of the chicken mixture down the center of each tortilla. Roll up tortillas to enclose filling. Place seam-side down in prepared baking dish. Spoon remaining sauce over top of enchiladas to cover evenly. Sprinkle with remaining 1 cup (250 ml) cheese. Cover with foil.
  • 3 Bake 20 minutes or until sauce is bubbly and cheese is melted. Sprinkle with remaining cilantro to serve.
