- 2 tablespoons (30 milliliters) vegetable oil
- 1 pound (450 grams) boneless skinless chicken breast, cut into small cubes
- 1 teaspoon (5 milliliters) salt
- 1/2 teaspoon (2 milliliters) Club House® Pure Ground Black Pepper
- 1 medium bell pepper, seeded and chopped
- 1 medium yellow onion, chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1/3 cup (80 milliliters) Cholula® Original Hot Sauce
- 6 (10-inch/25.5-cm) flour tortillas
- 4 cups (452 grams) shredded Mexican cheese blend
- Cholula® Salsa Medium – Original, to serve
INSTRUCTIONS
- 1 Heat oil in large skillet on medium heat. Add chicken; sprinkle with salt and pepper. Cook 4 - 6 minutes, stirring occasionally, until lightly browned and cooked through. Remove from skillet; set aside.
- 2 Add bell pepper, onion and jalapeño to pan. Cook and stir 5 minutes until softened. Stir in garlic; cook 1 minute until fragrant. Add mixture to bowl with chicken. Stir in Hot Sauce until well blended.
- 3 Carefully wipe skillet clean with a paper towel. Spray with no stick cooking spray. Heat on medium heat. Place one tortilla in skillet. Sprinkle 2/3 cup (75 grams) of the cheese evenly over tortilla. Spoon 1/3 cup (80 ml) chicken mixture onto one half of the tortilla. Allow cheese to melt slightly and fold tortilla in half to cover chicken mixture. Cook just until lightly browned on both sides and cheese is completely melted. Repeat with remaining tortillas, cheese and chicken mixture.
- 4 Cut quesadillas into wedges to serve. Serve with Cholula® Original Salsa and Mexican crema, if desired.
