- 1 tbsp olive oil
- 1/2 cup chopped red onion
- 1/2 cup chopped red capsicum
- 1/2 cup chopped yellow capsicum
- 500 g chicken mince or turkey mince
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/3 cup Cholula® Original Hot Sauce
- 16 slices (300 g) Deli ham
- 1/2 cup keto-friendly pre prepared salsa
- 8 eggs
- 3/4 cup shredded Havarti cheese (Jack cheese substitute)
- Chopped green onion (garnish)

INSTRUCTIONS
- 1 Preheat oven to 175°C. Heat olive oil in a large frying pan on medium heat. Add onion and capsicum; cook and stir 2 to 3 minutes or until softened. Add minced meat, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Original Hot Sauce for 5 minutes.
- 2 Take an 8-hole muffin pan (⅓ cup capacity) and spray with non-stick cooking spray.
- 3 Fold ham slices and press into bottom of the muffin pan, overlapping edges to hold filling. Divide minced meat mixture between muffin cups. Top with 1 tablespoon each of the salsa.
- 4 Crack 1 egg at a time into a separate small bowl. Then pour egg overtop of filling in each muffin cup. Sprinkle each with shredded cheese.

Bake 22 to 25 minutes or until yolks are set. Sprinkle with spring onion and drizzle with additional Original Hot Sauce to serve.
Tip: Can substitute Havarti for different cheeses
