  • 1 Heat oil in a large pan over medium heat until shimmering. Working in batches, fry potatoes about 5 - 7 minutes or until lightly browned on all sides. Remove from pan.
  • 2 Add crumbled chorizo to pan and cook until just browned, stirring occasionally (about 3 - 5 minutes).
  • 3 Increase heat to MEDIUM-HIGH and return potatoes to pan with Chipotle Hot Sauce. Stir to combine and cook until potatoes are tender.
  • 4 To serve, spoon potato and chorizo mixture onto serving plates. Top with eggs and drizzle with additional Original Hot Sauce, if desired.
