- 3 medium potatoes, peeled and cut into 1-inch cubes
- 2 tbsp (40 mL) oil
- ⅛ tsp sea salt
- 120 g crumbled, un-cooked chorizo
- 2 eggs, cooked sunny-side up
- ⅓ cup (80 mL) Cholula® Chipotle Hot Sauce
- Cholula® Original Hot Sauce

INSTRUCTIONS
- 1 Heat oil in a large pan over medium heat until shimmering. Working in batches, fry potatoes about 5 - 7 minutes or until lightly browned on all sides. Remove from pan.
- 2 Add crumbled chorizo to pan and cook until just browned, stirring occasionally (about 3 - 5 minutes).
- 3 Increase heat to MEDIUM-HIGH and return potatoes to pan with Chipotle Hot Sauce. Stir to combine and cook until potatoes are tender.
- 4 To serve, spoon potato and chorizo mixture onto serving plates. Top with eggs and drizzle with additional Original Hot Sauce, if desired.
