INSTRUCTIONS
- 1 Heat oil in electric multifunction cooker on SAUTE function. Season pork with salt, pepper and cumin. Working in batches as needed, place pork in pot in single layer. Cook, without stirring, 4 - 5 minutes or until browned. Turn and cook 4 - 5 minutes longer. Remove from pot; set aside. Repeat until all pork is browned.
- 2 Add onion, garlic, oregano, Original Hot Sauce, lime juice, orange juice, cola, and bay leaves to pot. Stir with a wooden spoon, scraping to remove any browned bits from bottom of the pot. Return pork to pot, stirring to mix. Close lid and set valve to seal.
- 3 Cook on HIGH PRESSURE 40 - 45 minutes. While the pork is cooking, heat 2 inches of oil in medium skillet on medium-high heat. When the oil reaches 350 – 360°F, fry tortillas in batches on both sides until golden and crispy. Transfer to paper towel-lined sheet pan to drain. Set aside until ready to serve.
- 4 When pork is done, quick-release pressure. Open lid once pressure inside pot is completely released (check manufacturer’s manual for safe operating instructions.) Discard bay leaves. Transfer pork to large bowl. Shred using two forks, discarding any fat. Carefully strain liquid from pressure cooker, reserving onions. Add onions and desired amount of liquid (about 1/2 to 1 cup) to bowl with pork, tossing to mix.
- 5 To assemble Tostadas, spread tortillas with smashed avocado. Top with carnitas mixture and sprinkle with onion, tomato, Cremosa Sauce, Chili Crisp and chopped cilantro. Serve immediately.
