- 8 cups (2 liters) water
- 1 pound (500 grams) small red potatoes, washed and quartered
- 1/4 cup (60 milliliters) canola oil
- 1/2 cup (125 milliliters) chopped red and green bell pepper
- 1/4 cup (60 milliliters) chopped white onion
- 1 teaspoon (5 milliliters) garlic powder
- 1 tablespoon (15 milliliters) chopped parsley
- 2 tablespoons (30 milliliters) Cholula® Original Hot Sauce
- 1/4 teaspoon (1 milliliters) kosher salt
- 1 tablespoon (15 milliliters) butter
- Black pepper, to taste
- 1 Egg, cooked sunny-side up
- 1 Green onion, thinly sliced

INSTRUCTIONS
- 1 Bring water to boil in large saucepan. Add potatoes. Cook 10 minutes or just until fork tender. Drain well.
- 2 Preheat oven to 400°F (200°C). Arrange potatoes on large sheet pan.
- 3 Roast potatoes 15 minutes or until golden brown.
- 4 Heat oil in medium skillet on medium-high heat. Cook peppers and onion about 5 minutes until softened.
- 5 Serve potatoes topped with egg and drizzled with Cholula Original Hot Sauce. Sprinkle with parsley and green onion to serve.
