- 1 tablespoon (15 milliliters) olive oil
- 1 pound (500 grams) ground chicken or ground turkey
- 8 eggs
- 1/2 cup (125 milliliters) chopped Spanish onion
- 1/2 cup (125 milliliters) chopped red bell pepper
- 1/2 cup (125 milliliters) chopped yellow bell pepper
- 1 teaspoon (5 milliliters) garlic powder
- 1 teaspoon (5 milliliters) ground cumin
- 1/2 cup (125 milliliters) keto-friendly prepared salsa
- 3/4 cup (175 milliliters) shredded Monterey Jack cheese
- 1 tablespoon (30 milliliters) olive oil
- 1/3 cup (75 milliliters) Cholula® Original Hot Sauce
- Sliced deli ham
- Chopped green onion (garnish)

INSTRUCTIONS
- 1 Preheat oven to 350°F (180°C). Heat olive oil in large skillet on medium heat. Add onion and peppers; cook and stir 2 to 3 minutes or until softened. Add ground chicken, garlic powder and cumin; cook and stir until browned and cooked through. Stir in Original Hot Sauce; reduce heat and simmer 5 minutes.
- 2 Fold ham slices and press into bottom of 8 muffin pan cups, overlapping edges to hold filling. Divide ground chicken mixture between muffin cups. Top with 1 tablespoon (15 mL) each of the salsa.
- 3 Crack 1 egg at a time into a separate small bowl. Then pour egg overtop of filling in each muffin cup. Sprinkle each with shredded cheese.
- 4 Bake 22 to 25 minutes or until yolks are set. Sprinkle with green onion and drizzle with additional Original Hot Sauce to serve.
